Cant’ take the rising heat? Time to turn to sorbet
Use the mango against the summer heat by turning it into a sorbet.
The summer brings not only an onslaught of heat, but also an abundance of mangoes. With the mercury in Gurgaon having climbed to 45 degrees recently, it’s likely that you’re looking for ways to beat the temperature. Here’s a way to use the humble mango as an antidote against the summer, by turning into a delicious sorbet. No ice cream maker needed!

What you need:
>Four large, fresh mangoes
>1/2 cup water
>1/3 cup honey
>Sugar (about 200gms)
>Fresh mint leaves (about 12)
>Juice of one or two fresh lemons
>Salt to taste
How to make it:
Step 1) Scoop mangoes into a blender.
Step 2) Boil water, sugar and mint leaves in a saucepan for a few minutes until it turns to syrup. Add to blender.
Step 3) Add lemon juice and honey.
Step 4) Blitz the ingredients! Make sure there are no chunks left in. Taste the mix, add salt if you like.
Step 5) Transfer the puree into a large, flat bowl or pan. Refrigerate for 30 min.
Step 6) Ice crystals will form on the surface. Use a large spatula to break them up and churn the mix well.
Step 6) Pop your sorbet back in the refrigerator and chill for (at least) six hours.
Step 7) Garnish with a few mint leaves. Serve cold.
Pro-tip: You can also add a bit of lemon or orange zest for that extra zing. Even a tiny bit of green chilly goes well with this recipe!
